In our previous T Side / L Side posts, we have showcased our own personal design styles, the way we decorate for holidays, and we have found many opportunities to relate this concept to cooking as well (some of our favorites seen here and here). These posts help us express our individual cooking needs and are a way of showing how a specific ingredient can be used in two very different ways. This month, we have chosen zucchini as our key ingredient. We have prepared to share how each of us have used this delicious and healthy ingredient along with the recipe (of course) so you can try it at home too!

T Side: When I began sifting through my own personal Pinterest boards for a zucchini recipe to use, I was  pleasantly surprised by how many times I have pinned recipes including this ingredient. It seems there are many many options for meals and side dishes to make with this particular green. I had a hard time deciding between taco stuffed zucchini (until I realized I had made it before and loved it  – seen here), a lush zucchini ribbon salad, and the recipe I chose … grilled zucchini and corn tostadas. This option seemed easy enough and fit in well with the spicy and savory mood I was in. I decided to add shrimp to make it even more filling.

I used this recipe for its ingredients and then improvised on the directions. The shrimp and zucchini were sauteed with our 3 C’s (cumin, curry, and chili powder) and the juice of a lime. I also made mine soft taco style with warmed up tortillas instead of open faced and crispy. They were absolutely delicious!

L Side: Recently, I found a recipe on one of the blogs I follow that I just couldn’t pass up! I am always searching for new dinner ideas that my daughter might actually try and thought these bite-size zucchini pizzas just might do the trick. How can you go wrong with hot tomato sauce and melted cheese on fresh slices of zucchini anyway? I was so happy to find that they were just as good as they looked in Lilyshop’s picture and so fun for the whole family!
