It’s Friday! Time for one of our favorite things … food! Do you ever find yourself “pinning” multiple recipes at once with no real purpose, just because they look good? We do this all the time, so it goes without saying that when we go back into our recipe boards and choose something new to try, we are pretty proud of ourselves. This particular recipe that we are about to share is one that was found on Pinterest and saved for a “rainy day”. It was pretty easy to follow. To make your own taco stuffed zucchini at home just follow these step by step directions:

1. Preheat oven to 400.

2. Cut 4 large zucchinis in half. Use a small spoon to hollow out the center of each half, and save the leftover zucchini for later.

3. Brown 1 package ground turkey in a large skillet. Add 1 teaspoon of each garlic powder, cumin, salt, chili powder, paprika, and 1/2 teaspoon oregano. Mix well.

4. Add 1/2 an onion chopped, red bell pepper, some cut up pieces of the leftover zucchini, a 4 ounce can of tomato sauce, and 1/4 cup water. Stir, cover, and let simmer for 20 minutes.

5. Fill each zucchini boat with the meat mixture and top with shredded cheese, chopped cilantro, scallions, and your favorite salsa.

6. Bake for 35 minutes or until cheese is melted and the zucchini is cooked through.
