It’s Friday! Time for one of our favorite things … food! Today we are sharing a dinner recipe we have been using for so long that we honestly don’t remember where it came from. We think this recipe for salmon with mango salsa was part made up using ingredients we were craving at the time and part found while watching a cooking show on TV. So we won’t fully take credit for this one, but we love it anyway. Of course, we don’t mind sharing this beloved but easy recipe with our readers as well. So here goes:

1. Bake salmon to perfection with just a few simple spices; paprika, salt, peppper, and olive oil.

2. Chop into small pieces fresh mango, red onion, cilantro and add the juice of one lemon to make your salsa.

3. To complete your meal, add quinoa. Follow directions on the package to make it nice and fluffy.

4. Arrange all together on a plate to enjoy the combination of savory and sweet!
