We can imagine most of you can relate with the concept of being greeted by the same question at the end of every week night … To eat out or in? Often times we even incorporate a third option into the mix: picking up dinner (prepared by someone else) to eat at home. We are all busy people, right? Who has the time to prepare a home cooked meal every night of the week? We do, of course enjoy cooking at home, and one of our favorite things to do is to come up with something quick and easy with the ingredients we have readily available. Recently, Lauren challenged herself to do just that with a bag of basmati rice, a can of black beans, and some pre-cooked shrimp. What she came up with was reminiscent of one of her all time favorite “pick up” meals … Chipotle burrito bowls.

Lauren’s Chipotle order involves their delicious grilled chicken. When making her own rendition, she decided to include something that Chipotle doesn’t offer; shrimp sauteed in lime juice, cumin, and chili powder.
